Spinach Corn Sabzi Recipe

Spinach Corn Sabzi is an easy recipe and healthy option for those who like eating healthy. It is the best way to add green vegetable in your meal. In this recipe, steamed corn is added in the spinach curry which is spiced with Indian masalas like ginger garlic paste, green chillies, onions, haldi, red chilli powder, coriander powder. It is also a great recipe to serve in your house parties along with Parathas or Pulao. 

Ingredients

  • 10 sprig Spinach
  • washed and chopped
  • 1/2 cup Sweet corn
  • boiled
  • Oil
  • as required
  • 1 teaspoons Cumin seeds (Jeera)
  • 1 tablespoon Ginger Garlic Paste
  • 3 Green Chillies
  • finely chopped (adjustable)
  • 6 Cashew nuts
  • 1 Onion
  • chopped
  • 1 Tomato
  • chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Coriander Powder (Dhania)
  • Salt
  • to taste
  • 5 tablespoons Milk
  • 1/2 teaspoon Garam masala powder

Instructions

Step 1

To begin making the Spinach Corn Sabzi recipe, heat oil in a heavy bottomed pan

Step 2

Once the oil is hot, add the cumin seeds

Step 3

 After about 10 seconds, add ginger garlic paste, green chillies and saute it on medium heat

Step 4

 Once ginger  & garlic releases its aroma add onion and cashews

Step 5

Saute them till onion turns to golden brown in colour

Step 6

After the onions have become golden brown add chopped tomatoes and cook them till they become tender

Step 7

 Add turmeric powder, salt to taste, red chilli powder and coriander powder

Step 8

 Mix them well to combine

Step 9

Once the maslas are combined add chopped spinach and cook it for about two minutes

Step 10

 Once spinach is cooked properly, put the whole spinach mixture to a blender and make a puree

Step 11

In same pan add sweetcorn and cook it for a minute

Step 12

 Now add spinach puree and milk

Step 13

Cook for about 3 to 4 minute on low flame

Step 14

 Add some garam masala to the Spinach Corn Sabzi, mix it well and cook for another minute and turn of the heat

Step 15

Remove the Spinach Corn Sabzi into a serving bowl and serve hot

Step 16

Serve Spinach Corn Sabzi along with Tawa Paratha and Lauki Raita for a weekday meal with your family
