Palak Gobi Sabzi Recipe (Indian Style Cauliflower with Spinach)

Palak Gobi Sabzi is a simple and healthy recipe that can be made for a quick weeknight meal. It is very similar to the Aloo Gobi Sabzi, the only addition is the spinach that adds more nutrition, colour and taste to the vegetable. Adding just a few spices into the vegetable brings out the best flavors from it. Serve Palak Gobi Sabzi with hot Phulkas or Tawa Paratha.

Ingredients

  • 2 cups Spinach Leaves (Palak)
  • finely chopped
  • 1 Cauliflower (gobi)
  • cut into small florets
  • 2 Tomatoes
  • freshly pureed
  • 1 inch Ginger
  • peeled and grated
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1 teaspoon Turmeric powder (Haldi)
  • 1-1/2 teaspoon Garam masala powder
  • Salt
  • to taste
  • 1 tablespoon Oil
  • 4 sprig Coriander (Dhania) Leaves
  • roughly chopped to garnish

Instructions

Step 1

To make Palak Gobi Sabzi, first chop the spinach and cauliflower

Step 2

Keep aside in different bowls until required

Step 3

Heat oil in a pan over medium heat

Step 4

Add the chopped spinach along with a little salt and saute on medium heat until the spinach is cooked and softened

Step 5

Turn off the heat and transfer the spinach to another bowl to stop the cooking process

Step 6

The more the spinach remains in contact with it, the more the colour tends to fade to dull green

Step 7

Again heat a tablespoon of oil in a heavy bottomed pan

Step 8

Add the grated ginger and cumin seeds

Step 9

Saute them for a few seconds

Step 10

Add the pureed tomatoes, turmeric powder, garam masala powder, salt and stir to combine

Step 11

Finally, add the cauliflower florets

Step 12

Add a little water to cook the cauliflower, cover the pan with the lid, turn the heat to low, cook the cauliflower for few minutes till it is tender

Step 13

The cauliflower will be soft, yet firm and delicious to taste

Step 14

At last, stir in the sauteed spinach, stir to combine

Step 15

Turn off the heat

Step 16

  Garnish with chopped coriander leaves

Step 17

 Serve the Palak Gobi Sabzi with Hot Phulka or Tawa Parathas along with a bowl of Punjabi Kadhi
