Bharva Baingan Masala Recipe - Stuffed Brinjal Masala

Bharva Baingan Masala Recipe, a super simple and delicious recipe of roasted eggplants that are filled with peanuts, sesame spice mixture and cooked in a tangy tomato puree. 

Ingredients

  • 10 Small Brinjal (Baingan / Eggplant)
  • For Stuffing
  • 1/4 cup Roasted Peanuts (Moongphali)
  • 1/4 cup Sesame seeds (Til seeds)
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1/4 teaspoon Red Chilli powder
  • 1/4 teaspoon SSP Asafoetida (Hing)
  • 1 teaspoon Amchur (Dry Mango Powder)
  • 1 tablespoon Gram flour (besan)
  • Salt
  • to taste
  • Ingredients for the Gravy
  • 1-1/2 cups Homemade tomato puree
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 Onion
  • finely chopped
  • 6 cloves Garlic
  • finely chopped
  • 1 inch Ginger
  • finely chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Red Chilli powder
  • 1 teaspoon Garam masala powder
  • Salt
  • to taste
  • 1 tablespoon Jaggery
  • 4 sprig Coriander (Dhania) Leaves
  • chopped
  • 1 tablespoon Mustard oil

Instructions

Step 1

To begin making the Bharva Baingan Masala Recipe, combine all the filling ingredients including roasted peanuts, sesame seeds, turmeric powder, red chilli powder, asafoetida, amchur powder, gram flour, salt in a mini food processor and make a smooth paste

Step 2

You can optionally add a little water and oil to make a smooth paste

Step 3

Once the paste is done, set it aside

Step 4

 Slit the brinjals cross wise just half way through, so it remains as a whole

Step 5

The slit should be just enough to place the filling in

Step 6

Stuff the above filling mixture in the the slit brinjals

Step 7

Heat oil in a pressure cooker over medium heat; add the cumin seeds, onion, ginger and garlic

Step 8

Saute until the onion turns soft and translucent

Step 9

Once the onions soften, add tomato puree, turmeric powder, coriander powder, salt, garam masala powder, red chilli powder, jaggery and saute for a few minutes

Step 10

After 2 to 3 minutes, add in the 1/4 cup of water, the stuffed brinjal and cover the pressure cooker

Step 11

Cook the Stuffed Brinjal for 3 whistles and turn off the heat

Step 12

Once the heat is off, allow the pressure to release naturally

Step 13

Open the cooker and gently toss in the coriander leaves into the Bharva Baingan Masala, give it a mix and serve hot

Step 14

Serve the Bharva Baingan Masala Recipe along with, Dal Makhani, Ghee Rice and Phulka for a quick dinner and end it with a hot Besan Halwa as a dessert
